- Specials Outside the Indian state of West Bengal, roasted Darjeeling was virtually unknown for a long time; in Kolkata, however, it enjoys almost cult status. What began as a traditional method of refining the monsoon harvest is now also very popular in urban centres such as Mumbai and Delhi. After the initial production process, the tea is subjected once more to high, dry heat, which gives it a wonderfully warming, well-rounded aroma.
